With all of the gardening during the month of May there's sure to be a little mud pie making going on with some of that piled up dirt... because everyone knows elves, fairies and especially garden gnomes won't venture out without a nice plate of enticing mud pies! Since they are so much fun to make outside, we thought we would whip up a batch that kids (and their adults...) would like to eat too!
Mud Pie cookies adapted slightly from this recipe:
Ingredients:
I stick (8 tablespoons) softened butter
1/2 cup firmly packed brown sugar
1/4 cup granulated sugar
1 egg 1/2 teaspoon vanilla
1/2 cup all-purpose flour
1/4 cup cocoa
1/2 teaspoon baking soda
1 1/2 cup old fashioned rolled oats
1/2 cup chopped walnuts
1/3 cup chopped semi-sweet chocolate or chocolate chips
Directions: Heat oven to 350 degrees. Beat together butter and sugars until creamy Add eggs and vanilla, beat well Add combined flour, baking soda, cocoa, mix well Stir in oats, walnuts and chocolate, mix well Drop by rounded tablespoon onto un-greased cookie sheet Bake 10 to 12 minutes (stay closer to 10 if you like chewy cookies) Cool 1 minute on cookie sheet, remove to wire rack
And what pile of mud wouldn't be a little nicer with a few candied violets?
