For some reason this year, the zucchini were late starters. It took forever for that first beautiful fruit to show up, but when it did, they kept coming... and coming.
So, recently I've taken to making all things zucchini...
... from savory fritters...
... to awesome zucchini/cream cheese frosting whoopie pies...
... to classic quick breads.

Zucchini Fritters: So good!
Zucchini Whoopie Pies: This recipe is great and even worked out without an electric mixer despite all of the instructions to beat the sugar and butter for 5 minutes until light and fluffy. I simply mixed mine by hand with a whisk for a couple of minutes and they turned out great. I also reduced the sugar in the frosting to 2/3 cup confectioners sugar instead of the 1.5 cups in the recipe and it was still perfectly sweet and delicious
Irresistible Zucchini Bread : I love this recipe, the only note I would make is, instead of buttering and flouring the pans, I lined mine with parchment paper in one direction (covering the bottom and the long sides) leaving extra length on either side. This way when the bread was done, all I had to do was run a knife along the two short ends, pull on the parchment paper "handles" and the loaves popped right out.
