Since the camping and hiking season is in full swing, it seemed like the perfect time to try out a new recipe for trek food! In the past we've made standard granola bars and gluten free energy bars, so this year I thought I'd give energy bites a try, and oh am I glad I did.
The easiest recipe yet, there is no baking, no candying honey, just pure. . .
. . . simple. . .
. . . beautiful. . .
. . . nutrition. And it tastes good.
Gluten Free No Bake Super Energy Bites
Ingredients:
- 2 cups raw cashews
- 2 cups dates
- 1-1/2 cup dried tart cherries
- 1/2 cup toasted flax seed (ground)
- 1 cup raw sliced almonds
Pit the dates and set aside. Grind the flax seed and reserve half for rolling. Place all the ingredients except the almonds into a food processor (included only 1/4 cup of ground flax). Pulse the food processor until you have a fairly smooth mixture. If you prefer more bite you could leave it a bit more coarse, just make sure you can easily roll a ball.
Once the mixture is combined, place in a separate bowl and begin forming balls that are about 1-1/4" in diameter. You should get about 30 balls when it is all said and done. Roll the energy bites in either sliced almonds or ground flax seed and store in an airtight container in the fridge.
If you don't care for cherries, you could substitute your favorite dried fruit.
