It's been hot lately. . .
. . . and we've been craving. . .
. . . something fruity. . .
. . . ice cold. . .
. . . and sweet. But instead of reaching for the sugar, we grabbed our favorite berries (and a little hidden kale) and paired them with some cute bug popsicle molds, a bug and butterfly net and few pocket guides for a lovely afternoon under trees.
Berry-Kale Ice Pops
Ingredients:
- 1 cup mixed fresh berries
- 1 cup baby kale
- 1 cup water
- 1-2 tablespoons ground flax (optional, but a good way to add some omega 3s to your treat)
- A touch of honey (optional for those who need a little more sweetness in their summer days)
Add the ingredients to your blender and mix until everything is well blended. Pour into your favorite popsicle molds (we used BPA Free Bug molds so we could add a little nature study to the fun) and set in the freezer.
When frozen, run the pops under hot water for a second to help release the mold and enjoy!
