There have been some chilly mornings around here lately and the weather has me craving warm. . .
. . . hearty. . .
. . . nutritious. . .
. . . and very delicious. . .
. . . breakfasts. Unfortunately I couldn't capture the steam rising from those warm slices in the photo, but I think you get the picture. Oh. So. Very. Good.
Morning Glory Bread
Ingredients: makes two 3"x6" breakfast loaves or 6 large muffins
- 1 cup flour
- 1/3 cup brown sugar
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 eggs
- 1/2 cup olive oil
- 1 teaspoon pure vanilla extract
- 1 cup shredded carrots
- 1 apple
- 1/3 cup raisins
- 1/3 cup sliced raw almonds (plus more for sprinkling on top)
- 1 tablespoon millet (optional)
- 1 tablespoon chia seeds (optional)
Preheat your oven to 350 degrees.
In a large mixing bowl whisk together the flour, sugar, cinnamon and salt. Peel the apple and shred it with a grater making sure not to get into the core. Add the shredded carrots and apples to the dry mixture.
Chop the sliced almonds a bit more so the pieces are about half the size. Add the raisins and almonds to the dry mixture as well.
In a separate bowl, whisk the oil, eggs and vanilla and then pour the wet mixture into the dry.
When combined, split the batter between two parchment lined 3"x6" baking pans and sprinkle with millet seeds, chia seeds and sliced almonds. Bake for about 30-35 minutes or until a toothpick comes out clean. If you are making muffins instead, the baking time would be closer to 20-25 minutes.
Allow to cool for a bit and serve with butter, a touch of honey and your favorite warm breakfast drink.
