With all of the camping and hiking that goes on during the summer months, we go through a lot of energy bars and it's always nice to have a new one in the rotation. This lovely is. . .
. . . gluten free and vegan. . .
. . . packed with good energy. . .
. . . free from refined sugars. . .
. . . and refreshingly good with a powerful punch of orange backed by sweet fig and crunchy almonds.
Gluten Free Vegan Orange Fig Almond Granola Bars
Ingredients:
- 2 Cups gluten free Rolled Oats
- 1 cup almond meal
- 1/3 Cup olive oil
- 2 tablespoons chia seed
- 4 tablespoons boiling water
- 1/2 Cup Maple Syrup
- 1/2 cup orange juice
- 2 packed tablespoons orange zest
- 1 Cup Sliced Almonds + more for the top
- 1 teaspoon vanilla
- 1 Cup chopped dried figs
Preheat the oven to 350.
Mix the boiling water and chia seeds together until they form a slurry. Set aside.
Mix all of the dry ingredients together and then add all of the wet ingredients including the chia slurry.
Pour the mixture onto a parchment lined baking pan and press into a 1" layer. If your pan is too big, just make a smaller rectangle with the granola, it is sturdy enough to stand on its own.
Bake for 20-30 min or until the edges are a rich golden. Allow to cool completely and cut into 16 bars.
