The first day of summer is almost here, and so is Father's Day!
With this in mind, we have been craving some time outside by the fire hanging out with Pops...
... and what goes better with time by the fire than marshmallows?
The idea of making marshmallows from scratch was honestly a bit daunting. Add to that the bright idea that we should incorporate our awesome new Natural Food Coloring Kit, and we were a bit stumped. That is until I remembered that our dear friend Jessica over at The Real Food Dietitians had already come up with a great recipe for delicious homemade marshmallows.
These are no ordinary marshmallows. Made free of corn syrup, and made instead with wholesome honey and maple syrup, these fireside treats are one you can feel good about. And the best part? They are actually really easy to make! You just need a bit of patience.
The slightly tricky part came when I added the colors. With some trial and error, I found out that these delightfully bright hues need to be added as quickly as possible once the marshmallows have been whipped up, before they start to set. Once they start to set, adding the food coloring is not really possible. So once I swallowed my pride and made a second batch of marshmallow fluff, I mixed in the colors quickly and I have to say, I love the swirls of color!
Of course the best part of this whole endeavor was the time my Papa and I spent sitting around the fire later in the evening, reminiscing about campfires and family trips gone by. We hope you'll give these lovely treats a try, and spend a little time making sure the fathers in your life know just how much you care.
