Is there anything cuter than sweet little sandwiches on a summer afternoon? We don't think so, especially when they're filled with. . .

. . . sliced and mixed into the. . .
. . . savory and. . .
. . . sweet combinations. . .
. . . perfect for tea with the butterflies out in the garden.
Butterfly Tea Sandwiches
Ingredients:
- 24 pieces of white sandwich bread
- 1 medium Cucumber
- 4 large Radishes
- 4 large strawberries
- 2 sprigs thyme
- 4 large mint leaves finely chopped
- 1 brick cream cheese (room temperature)
- Salt and pepper to taste.
Cut the crusts off of your sandwich bread (or use a large cookie cutter like I did) and save the scraps to make bread crumbs for other recipes.
Mix 1/3 of the cream cheese with the mint and another third with the thyme.
Spread a thin layer of mint cream cheese on each side of the sandwich bread and place your sliced strawberries so that they make a scalloped edge around the sandwich. Make 4 mini sandwiches of this variety.
Do the same with the thyme cream cheese and the radishes. And, finally, the plain cream cheese and cucumbers. Salt and pepper these two variations if desired.
You will have 12 little sandwiches in total (4 of each flavor).
Put little toothpick flags in your sandwiches and serve with tea (we love this tea set) outside under a tree with kiddos while you wait for the butterflies, ladybugs, and fairies to come join you.
