Around this time of year I find myself craving all things sweet and frozen, but also, not feeling so great when I eat all things sweet and frozen. . .
. . . which is exactly why I made these little lovelies yesterday. Simple, rich, and, pretty darn healthy!
With just the thinnest coating of dark chocolate (full of antioxidants) and a quick roll in unsweetened coconut before heading to the freezer. . .
. . . these little beauties. . .
. . . can make you feel like you're eating something with a LOT more fat and sugar. Shhhh, don't tell the kids.
Quick Healthy Summer Bon Bons
Ingredients:
- 1 cup blueberries
- 2 ripe bananas
- 1 cup unsweetened shredded coconut
- 7oz dark chocolate
- 1 to 2 tablespoons coconut oil
Equipment:
- bamboo skewers
- parchment paper
Wash and dry the blueberries and slice the bananas. In a heatproof bowl over a pot of simmering water, melt the chocolate. Add the coconut oil a little at a time just until the chocolate becomes thin enough to easily coat the fruit in a thin layer.
Cut the bamboo skewers with scissors to 3" lengths (approximately). Poke through a blueberry and then a slice of banana before dipping them in the chocolate. Roll the edge of the banana part in coconut and place on a parchment lined baking sheet.
To make the blueberry poppers, use the sharp end of a bamboo skewer to pierce the blueberry and dip it halfway into the chocolate. Roll it in the coconut and use another skewer to help you push it off onto the lined baking sheet.
Freeze overnight or until the fruit is frozen through.
